Ingredients

2 Kirby cucumbers or 1 English cucumber

1 minced clove garlic

1 scallion, minced

1 tbsp gochugaru

1 tsp of rice wine vinegar

½ tsp sugar

1 tsp each toasted sesame oil and sesame seeds

Preparation

Cut cucumbers into rounds (no need to de-seed if using English cucumber). Rub 1 tsp. salt into rounds and let sit for 15 minutes.

Drain well and mix in all other ingredients.
